We really enjoy eating occasionally at La Madeleine's French Bakery, and they have these wonderful little Potato Gallettes. These quinoa cakes reminded me of those! Mmmmm!
Quinoa is one of few vegetarian foods that provides all the essential amino acids, & just 1 cup has 5 1/2 g of protein. It's very nutritionally dense, and is great for those with gluten sensitivities. Quinoa is loaded with fiber and vitamins and is a great substitute for any other grains in traditional recipes. Eaten hot or cold, quinoa packs a really healthy punch!
Parmesan Quinoa Cakes: (makes 12 cakes-you can freeze for later!)
2 1/2 c. cooked quinoa, room temperature
4 beaten eggs
1/3 c. grated parmesan cheese
1/2 tsp salt
1 chopped green onion
1 yellow or white onion chopped
3 cloves garlic, minced or finely chopped
2 tbsp olive oil
Mix quinoa, salt and beaten eggs in a large bowl. Add onions, garlic and cheese and blend well. Heat olive oil in a skillet over medium to med-high heat. Scoop about 1/3 cup of mixture into skillet, using a spatula to shape and flatten into a little round cake. Cook until crispy and brown on each side, taking care not to break the cakes when turning, about 3-4 minutes per side. These are pretty tasty as a side, but would complement a tomato dish or marinara well.
