I think I may have flunked out of being vegan. Seriously, I'm horrible. Today is the 4th day, and I am realizing how hard being vegan really is. I had dinner with my friend, Scott yesterday & I was just munching along on my healthy food, thinking I was doing a pretty good job. Not so much. I ate a big spoonful of hot & sour soup & thought, "mmm...HOLY TOFUBALLS!! I just ate egg!" "SCOTT!!!" I blurted. "Dude, I just ate egg! I'm supposed to be doing this vegan thing!!"
That wasn't even the only screw up. I ran out of my Vegan Chocolate Shakeology, so I've been drinking the Vegan Tropical Strawberry. I like a lot of variety in life, so I felt like having Greenberry today. About two sips in, I gasped & almost aspirated. WHEY PROTEIN! Not vegan!
Oh well. Tomorrow's a new day!! I am not giving up. I'm going to try again tomorrow & see how it goes. I've decided not to beat myself up about it because I'm only doing it to see what my results will be like. I think this is the moral of this blog! Don't beat yourself up if you make a couple of mistakes here & there. If you slip up & cheat, don't throw your whole day away with bad food choices. Make it up on the next meal or snack. If you primarily eat healthy, it's okay to allow yourself a treat occasionally. JUST DON'T MAKE IT A HABIT! Keep the good habits as your primary focus & you'll be fine. I'll be fine. I'll just be vegan-ish on occasion!

Vegan Chocolate Shakeology PB cups
1 scoop of Vegan Chocolate Shakeology
Coconut or almond milk (about 1/3 cup or more to make pudding-like consistency
Natural Peanut Butter
Line muffin pan with cupcake papers. Mix shakeology & milk in a bowl, gradually adding the milk until it reaches pudding consistency. Place a little spoonful of PB in bottom of cupcake liner. Spoon in shakeology. Top with a dollop of PB. Stick this in the freezer for at least an hour, then enjoy! (And don't feel guilty if you eat 4 in one day like I did!)
